Low Carb Nicoise Salad

There are a million ways to make this salad, but for those of us on a low carbohydrate diet - this is a great way of doing so. There are trace amounts of carbohydrates in the onion and tomatoes, but nothing to kick you out of ketosis. Unless you have a bottle of wine with it........... Joke - sort of.

I am listing the ingredients for one person as I never try an inflict my dietary choices on my wife when I am cooking. If you happen to be preparing this salad for a non-low carber - add a boiled and chilled potato for them - cut it into bite-sized pieces, boil it and chill it in cold water of a fridge for 30 minutes or so before serving.

Low carb Nicoise salad ingredients (per person):

  • One hard boiled egg
  • Handful cooked and chilled green beans
  • Two small tomatoes
  • Half a small, young white onion
  • Handful lettuce leaves
  • 80 Grams Canned Tuna
  • Pickled anchovies (if you like them - I do not)

For the dressing:

  • 100 ml fresh extra virgin olive oil
  • teaspoon Dijon mustard (I prefer seeds in, but seedless will work)
  • Dash of salt and fresh ground pepper

It doesn't get much simpler than this. Prepare the green beans, egg and - if you are making this for a foolish sugar eating Neanderthal - the potato - cook and chill them ahead of time.

Wash and place the lettuce in the center of the plate and arrange the other ingredients around the edges. Make the dressing by adding the ingredients to a bowl and stirring. Pour over the lettuce. Open the Tuna and pour over the lettuce.

Try and avoid canned Tuna that has sugar added. The makers are sneaky little bastards and will try and hide sugar in anything - including tinned Tuna. Read the ingredients. If it is Tuna in anything like mayonnaise or tomato sauce - I would bet there is sugar added.
