This is another very, very simple recipe. It is also another variation on a theme. When I first started following a low carbohydrate diet, I really was not convinced you could lose weight by eating low carb meals but having lost 24 pounds in the first month - I am now convinced.  I was pretty strict the first couple of weeks - no alcohol and almost no carbs at all, then I started adding a few here and there for flavor. It is actually quite hard to think of simple taste variations and I am now slowly building a collection of simple recipes around what I am calling the "modern day cave man diet." Bearing in mind that our ancestors did not have access to cheese - except by accident perhaps.

So another breakfast omelet - this one using Italian Prosciutto ham, cheddar cheese and spring onion. The ham can be difficult to find, but get it shipped from Amazon in that case - they sell it either pre-sliced, or by the whole ham. It will last a long time, so the whole hams offer better value for money - but - that is a lot of ham.

How to make the omelet:

Ingredients:

  • three free range eggs
  • splash of heavy cream
  • salt and pepper to taste
  • slice of Prosciutto ham
  • grated cheddar cheese (aged preferred - no the plastic stuff in individual slices)
  • one spring onion
  • knob of butter
  • splash of  olive oil

Start by throwing a knob of butter and a splash of olive oil in a frying pan and turning the heat to medium- I always use one of my trusty cast iron skillets. While the pan is heating and the butter is melting, break the eggs in a bowl, add the salt pepper and cream and whisk. Then slice the ham into small pieces, slice the spring onion diagonally and grate a handful of cheese.

When the butter is melted and the pan is hot - not too hot - medium to low is fine, pour the egg mixture in, sprinkle the ham and onion over one side of the eggs and add the grated cheese. Cook slowly until the eggs are hardened evenly, then fold over, cut in two and serve. I added a few spring onion slices for effect. This is what the finished omelette looked like. Awesome flavor combination.

Simple recipes don't get much simpler than this.  This is about a two minute recipe and easily one of my favorite low carb recipes. Losing weight by eating low carbohydrate meals is one of the best choices I ever made. For some reason my taste buds are more alive than they have been for years, and the subtle combination of flavors here really does demand the best ingredients you can lay your hands on. I prefer the taste of wild salmon, but if costs are prohibitive, farmed will do - you just lose some of the great flavor. Subtly different than the smoked salmon omelet, but a wonderful combo.

Ingredients per person:

  • two fresh free range eggs
  • splash of heavy cream
  • salt and pepper to taste
  • slice of smoked salmon
  • sliced spring onion
  • dollop of butter

Simple. Break the eggs into a bowl while the butter is melting in a small sauce pan over medium heat, add a dash of cream and a little salt and pepper to taste and whisk the eggs briefly.

When the butter is melted, make sure the bottom of the pan is completely covered with butter and add the eggs.

While the eggs are cooking, slice the salmon and spring onion. Break up and stir the eggs and continue cooking until all the moisture is gone and pour onto a plate. Garnish with the smoked salmon and onion. Two minutes has just elapsed and you are in for a treat our distant caveman ancestors would have killed for.

This one is very simple to make - eggs makes a fantastic low carb meal. One of the problems I found losing weight by eating  low carb meals was boredom and I started really thinking hard about how to make simple but tasty low carbohydrate meals for one person - as I did not want to inflict my dietary choices on my wife. This is a combo I love - I prefer wild smoked salmon for this as the taste is so much more intense. Definitely modern cave man eating. Ingredients:

  • 3 eggs
  • splash of heavy cream
  • knob of butter
  • slice of smoked salmon
  • chunk of cheddar cheese
  • handful fresh chives

Note - modern day cave men (and women) do not believe in measuring portions. You know when you have eaten enough - your body will tell you - and the longer you stay with this way of eating - the more in-tune you will become.

First - put the skillet over a low heat to warm up. I always use a cast iron skillet, but any medium sized skillet or fry pan will work. Throw in a knob of butter and melt - when it is starting to go brown - the pan is warm enough. Make sure the pan has butter all over the bottom - we don;t want this sticking.

Break the eggs in to a bowl, add a dash of salt and pepper to your taste and a splash of heavy cream. Wash and chop the chives and throw in with the eggs. Whisk for a few seconds to break the eggs up and add a little air.

When the pan is hot, pour the eggs in. Slice the smoked salmon in to small pieces, add to the eggs and grate some cheddar cheese over. Cook until the eggs are hardened, fold over and serve. Five minutes start to finish.
